Add all of the dough ingredients to the bowl of a stand mixer.
Mix by hand until the flour has soaked up the liquids.
Attach a dough hook to your mixer and knead for 5-10 minutes until the dough is smooth. It is okay if it is still sticking to the sides of the bowl.
Grease a large bowl with butter and move the dough to the greased bowl.
Cover the bowl with plastic wrap and a towel and place in a warm area for about 1 hour, until it has doubled in size.
When the dough has risen and doubled in size, sprinkle the countertop or pastry mat with flour. Put the dough on the flour and sprinkle more flour over the top.
With a rolling pin, roll the dough out to approximately 60 x 40 cm rectangle.
Mix together the brown sugar and cinnamon for the filling. Brush the melted butter over the dough and then sprinkle the cinnamon sugar mixture over the entire surface. Lightly press it in with your hands.
Roll up the dough tightly and cut into approximately 12 slices.
Grease (or cover with baking paper) a baking pan approximately 35 x 25 cm in size (can vary). Place the slices onto the pan and lightly brush the sides of the rolls with melted butter.
Cover the pan with plastic wrap and a towel and place in a warm area for approximately 45-60 minutes or until the rolls have almost doubled in size. NOTE: This step is important and the rolls will turn out better the more they rise! Do not rush this step.
While the rolls are rising, start your pellet grill and set to 200°C (400°F). If baking in an oven, set to 190°C (375°F).
When the rolls have risen, pour the warmed (not hot) heavy cream over the rolls.
Bake the rolls in your pellet grill for approximately 30 minutes. This will vary depending on your pellet grill, size of pan, how much your rolls have risen, etc. It may take anywhere from 15-45 minutes to bake. We use a Yoder Smokers YS640 pellet grill and we bake on the top shelf to avoid radiant heat from the bottom. The tops of the rolls should be slightly golden, while the centers should be cooked but still very soft. If using an oven, bake for 15-20 minutes.
While the rolls are baking, prepare the topping
Cook your favorite bacon until crispy. Let it cool and crumble it.
In a large bowl, blend the softened cream cheese and butter with a hand or stand mixer
Add the powdered sugar and maple flavoring and beat until smooth
When the rolls have baked and cooled, spread the maple frosting over the top and sprinkle with the bacon. Enjoy!
